How Dairy Day came to be
We began Dairy Day in Hertfordshire in 2008 – our big ambition to build our business into the UK’s finest artisan cheese and yoghurt producer. Now more than a decade on our family-run dairy is making us very proud indeed.
We began Dairy Day in Hertfordshire in 2008 – our big ambition to build our business into the UK’s finest artisan cheese and yoghurt producer. Now more than a decade on our family-run dairy is making us very proud indeed.
Growing up on a farm in a small village in the south of Lebanon, the Kassem family were brought up on the delicious traditional cheeses, yoghurts and dips made by their mother and grandmother. So, when Chadi moved to the UK twenty years ago he couldn’t wait to share those flavours with the diners in his Lebanese restaurant in Hertfordshire.
Halloumi proved to be a big hit on his menu, but Chadi struggled to find a supplier offering the quality of cheese he was used to eating at his grandmother’s kitchen table. So, he decided to start making it himself.
In 2010, nearly a decade after arriving in the UK, the Kassam brothers opened their first dairy, using local cow’s milk, British suppliers, and traditional techniques to ensure the very best authentic flavours. Their grandmother’s recipes are still used, and they are now one of the largest Halloumi makers in the UK.
Two years ago, the company was able to expand into a purpose-built dairy in Letchworth Garden City, and although the new factory offers hi-tech automated production facilities, Dairy Day also continues to hand-roll, press through cloth and age the artisan products that make the brand unique.
Dairy Day now produces more than thirty different products, and supplies some of the most exclusive restaurants in London – its award-winning Halloumi is a firm favorite amongst the celebrity clientele at many of the capital’s finest eateries and is also sold at Harrods and Harvey Nicholls.
